Most likely, because maintaining blood sugar levels when your glycogen stores are depleted is stressful.

Try drinking plenty of orange juice (nutritious and contains a mild antihistamine) and taking niacinamide to lower adrenaline.
Pregnenolone can also help greatly in lowering cortisol.
NAC can calm the nervous system.

Reading a book puts me to sleep in 10-15 minutes, I don't know of any reasons why fasting would improve your insomnia because It seems to me that Insomnia is very rarely a dietary issue. It's more likely that insomnia will cause diet issues because lack of sleep causes skinny people to lose appetite and fat people an increase in appetite generally, It's not actually tied to being fat or skinny It's just that your body seems to be biased towards one or the other (skinny or fat).

I don't have insomnia but I had and still have massive sleep problems. Been struggling with it for 5+ years. If you're skinny eat lots of high fat mostly vegetarian foods, if you're fat eat a basic diet of one meal a day like 200g very lean chicken, 30g chia seeds, 200g broccoli, 50g lentils, and 1 avocado, 2g ginger, 50g blueberries, avoid sugary foods including most fruits NOT including berries, don't ever dry juice or anything that has sugar in it, run 5-10km every day you're gonna lose weight.

Unfortunately, diet, exercise, and fasting are not the first pillars of health, more like the 2nd 3rd, and 4th behind sleep which is number 1.
