How to know if this solipsism stuff is not just some cope mechanism?

Solipsism is where consciousness is the only thing that exists, and if it is not happening within consciousness, it does not exist. Your consciousness bubble, that is happening right Now, is all there is. That's the entirety of the whole universe. And that universe is all You, as God, making yourself a dream of yourself, for yourself, and making yourself forget that you did, so you can enjoy the dream. 

To answer your question, nothing anyone says will matter, as it will just be you telling yourself something. It's all you. Only way to answer your question is to have a Spiritual Awakening, to wake up from the dream and remember who and what you really are. You cannot understand this from within the dream.

as long as it's just an idea, it can and will be used as a coping mechanism. the ego tends to project all of its fears and hopes onto ideas and concepts, especially the spiritual ones. hence why spiritual teachers are encouraging you to transcend the rational mind. instead of looking for intellectual explanations, you are invited to look for and feel what's written between the lines:)

It is a cope mechanism, an extreme one at that.

The trickery in that line of reasoning is that you're going from "consciousness is the only thing that exists" (fine) to YOUR consciousness is the only thing that exists.

In other words you're begging the question as far as the separate self concept being real, as opposed to a conditioned perception.

That only works on people who haven't seen past the separate self illusion.

Yep, Solipsism is that if it's not within consciousness, it doesn't exist. If you're experiencing consciousness, you're the one and only, and there is nothing else other than that. And "your consciousness" is God, which is You. That means everyone within that consciousness only exist as images within consciousness. God is imagining that they have their own consciousness and life and thoughts beyond the bubble of consciousness being experienced. 

Not saying this is the case, Just that is my definition of Solipsim.

If your feeling relief, your feeling relief, who cares if it is or isn't from some undefined concept called "cope mechanism".  Even if your authentic people will tell you your not, and if you aren't people will tell you are sometimes, so.....  relief is relief, don't over think it.
