The liver doesn't store toxins

Ive heard this said quite abit, and have heard leo saying this in the forum that its unsafe to eat because of this. just thought it might be helpful to share

This is kinda true, but lacks nuance.
The liver can accumulate toxins and heavy metals, but so can every other part of the body. Through high metabolic activity, its also more likely to store those molecules in the hepatocytes. Also, Cadmium for example is known to accumulate especially in the liver.

Liver filters the blood. Any shit in your blood which its enzymes cannot break down will get clogged up in the filter.

Enzymes do not neutralize heavy metals, plastics, teflon, and other horrible chemicals.

Maybe 100 years ago this would have been true. Nowadays, most agricultural animals are obese, malnourished (in terms of nutrient quality), fed the poorest quality of food. They are fed the most contaminated, the shittiest and the cheapest food the poor underpaid farmer can get. Do you really think eating that animal's organs is gonna make you somewhat stronger? 

This person chose to focus on copper, ok. Copper can easily be found in huge abundance of plant foods too. You can get too much copper from liver as well as too much iron. Once upon a time people who have had to eat animal organs because frankly.,..food was scarce and when the optins were potatoes, onion and cow you ate everything you had to. Nowadays we've moved past that and we don't have to eat foods like that anymore (unless we choose ofcurse) 

Btw liver is not super clean either, if you dig into pubmed research you'll very quickly find articles showing high lead content, high cadmium and even high arsenic content. The world is fucked up and the more complex cellular structure our food has (e.g. animal tissue) the more possibility for contamination there exists.

Thats not accurate. 

Heavy metals and all the other unwanted molecules accumulate to the degree of their chemical affinity towards the particular tissue. Thats why you see the highest concentrations of heavy metal contamination in fat-rich organs like the brain or bone marrow. This fundamental characteristic is what makes chelation-therapy even possible. The liver-damage through heavy metal overload is usually a byproduct of complex autoimmune events.

Fun fact: If your healthy liver turns into a fatty liver (which is super common and has a 50-70% morbidity in certain regions) it gets more susceptible to heavy metal uptake - which creates a downward spiral and is a co-factor for cirrhosis.

I eat liver pretty regularly. It’s nutrient dense and tastes pretty good if you know how to cook it right. If it’s giving me heavy metal poisoning, I’m currently unaware of it.

To @Michael569’s point about the shit show that is animal agriculture, it’s highly important if you’re eating liver to source it from the highest quality farms you can find. Pay extra if you have to.

And really, we should all be sourcing our food from the highest quality sources available no matter what we are eating. That holds true for vegetables, fruits, muscle meat, organs, fish, water, nuts, grains, whatever.

The reality is our food system is deeply intertwined in issues of social justice and environmentalism. So if we are not including these issues in our individual choices, we are not taking responsibility for our collective well-being. Our choice power as individuals is limited by system constraints but it still matters.

@Leo Gura I don't know about eating liver being regenerative magic, but there is some validity to what this is pointing to. I know people who have benefitted from glandular therapy. And many claim to have seen improved health by consuming certain organ meats.
