They speak about how it gets debunked by "anything goes", and that this isn't plausible for science as it is nihilism.

I think they are absolutely right, that the right solution to this is that the only thing that does exist is our suffering. And this is no nihilism.

Science uses the excuse however that "anything goes"  is nihilism, there for nothing else exists and we can just do science as we please. Which is of course first class sophism.

Of course it is a wrong view. Our suffering does exist, and is the only thing that truly exists, besides this, nothing exists. Basing a non dual system on this should make science much more responsible, almost morally improving on where to put attention on, invest in, and what not.
