Is sitting down and focusing on all the sounds around you strengthening the mindfulness muscle?

Sure, that's one part. It's more about being at peace with those sounds, loving them and accepting them no matter the condition, and being thrilled to exist to observe them. Try doing it with touch, sight, smell, and taste too. Doing this more often and more deeply each time will "strengthen your mindfulness muscle"

Yeah. I never do hearing meditation when I'm serious but when I am in nature I usually experiment with hearing meditation.

I havent watched this video but here you go:
