what kind of carbohydrate i can eat fresh?

Fruits and berries. Carrots,tomatoes, bell peppers, snap/snow peas

@TheSomeBody if you are going raw vegan bananas are a good carbohydrate source that doesn't require any cooking. Oatmeal is another great food but requires some soaking in liquid before eating.

One of the most nutritious is sweet potatoes or yams. The main thing eaten in the okinawan diet.  You cant eat those completly raw however but here is a great tip to warm them to a temperature where the nutrients doesn't get destroyed.
