What are the "Stages"?

I read about this a when I first joined but didn't really pay any attention. But I have been seeing people talk about these different color "stages" and am wondering what it's all about and supposed to mean. I tried to find the original post that had the picture diagram, but this site has so many threads lol

How are you supposed to know what stage you are on? 

I honestly don't get it lol
