So... are all religions and philosophical beliefs "correct"?

But also incorrect at the same time?

They are correct in the sense that they are what people need to listen according to their spiritual level.

But, in my opinion all scriptures are correct, the problem is the interpretation that people give to them.

Don’t you realize that all of you together are the temple of God and that the Spirit of God lives in you?

Abstractions based off abstractions.

A result of the evolutionary nature of thought.

Also the product of the demands for psychological security/ego permanence.

Each map has its own domain of applicability and utility.  Also, there are better and worse maps.  But that's for each individual to find out for his or herself.  You can't avoid the seeking aspect of this work.  There is no sense in which an answer can be provided in advance to resolve this problem.  You just gotta jump into the Philosophy pool, and there is no shallow-end.  You just plop yourself in and fake it until you start to make it.  Otherwise you're gonna be full of second-hand platitudes about theory, which is a cheap way to look at theory.  The only way you're gonna find out about theory is to dive into them yourself and tinker with them.  You can't hand-wave Philosophy away so easily.

To answer this question, think of the most ridiculous claims of a religion and assess. When reading the claims in Mormonism or Scientology, is it simply a matter of incorrect interpretation? Are the claims in the Flying Spaghetti Monster religion correct? If Santa Claus was a religious story, would that transform it to truth?

If its a matter of getting a lesson from a story, what spiritual life lessons can one get from humpty dumpty or three little pigs?

Delusion leads to confusion.

there is no meaning to categorizing beliefs as true or not, because they are within the realm of all possibilities. in a non-dual reality, every possibility will exist in accordance with the circumstances that make it possible to exist.
