Observation without judgement/labelling AND thinking - empty cannisters?

Observation without judgement or labelling seems like it would trigger the brain to be in  constant overdrive  thinking about not labelling an experience - "that's an beautiful sunset", "that's a fucked up house" etc. 

What really is it like to get to the point where you can observe without judgment that which you have always observed and judged?

Its peaceful, calm. I havent reached the peaceful part but im always calm. When you dont have negative emotions, all there is left is those emotions and happiness. When you dont have any emotions bothering you, you can actually enjoy life. If there is nothing to judge, all you can do is appreciate.
