Big Goals Vs Proper Expectations, Where Is The Line?

every time I set big goals, frustration comes when I am just stuck and feel like to give up. While when I try to set what is doable, I just lose motivation. Where to set the line between these two extremes. Anyone having good mental model on that which works?

Habits. Motivation is temporary, not to say it isn't massively important, but habit is the thing that keeps the ball moving, it keeps the momentum, helps you do it even when you have 0 motivation and your mind is completely somewhere else. Find habits to build specifically for your goals and do it everyday or every week, month etc depending on your goal.
