I've also seen somewhere that latinos have less food allergy that white peoples in USA.  

USA food manufacturing sucks. Bottomline. They put extra shit in the food that's not needed. It's cheaper; I guess that's the main reason.

Get a good quality decaf! This one is my favourite out of a bunch I've tried, and it's also Swiss Water Processed.

yeah also cause most of them don't taste good, so I wouldn't even drink it only for the taste.

I'm not an expert, but don't all decaf coffees go through a strong chemical process? I read about it and from then I never drank decaf again; but probably it's not like this with all the coffees I guess... I imagine we have also genetically modified coffee plants without caffeine. to be honest I don't know.

I don't get crazy palpitations, but I see my hands become shaky, which is not good for me, I am a guitar player and I need steady hands. Of course I don't drink coffee when I need to practice.

You can also try dandelion root coffee or mushroom coffee. (Google). You can also boil some fresh cloves and sip on that using milk of your choice - tastes like coffee but only if you use a lot of cloves to make it strong.

Yes i used to not drink coffee only tea.

But then traveled to Latin America recently and it was hard to find good tea. Not a nice Earl Gray or Darjeeling in sight can you believe it? I was sad.

So i started drinking coffee. I even went to coffee tours in Panama and Colombia.
And I’m chronically fatigued and work often late shifts so it’s a welcome dopamine hit. I don’t drink it everyday though.

Tried it. Doesn't work so well with expresso. xD 

Perhaps with American coffee which is prepared with more water...

Generally, yes, except for Swiss Water Process. In a nutshell:

Otherwise, chemical solvents (often methylene chloride) are used.
