Genetic Evolution is not random (Infinite intelligence episode)

In the "What Is Intelligence? - Infinite Intelligence Explained" episode Leo mentions that the genetic evolution is not random, and that the science is starting to show this aspect.

Are there any resources about this argument? It's interesting because it could contradict the "Infinite monkey theorem" which I intuitively find wrong.
