I am not saying that Stainless steel is bad, but it is not 100% safe due to the chance of tiny metal particles getting into the food and then into the brain or liver. With a high qualty ceramic non stick coating this doesn't happen. I checked and the paint is just silica coating. I doubt most kitchens even know about this. They use stainless steel mainly for speed and durability not health.

If the ceramic pan is high quality, you don't use hard metal utensils on it and do not expose it to sudden sharp temperature changes it won't chip off. If the coating compromises over time you can simply get another one. Stainess steel is acceptable, but it is an alloy that contains nickel and chromium and if scratched, or if you cook using too high of a temperature tiny particles could get into the food.
