Ingredients - 1 cucumber 1 cup cherry tomatoes Half red onion Half cup feta cheese (cubed or crumbled) Half cup green and black olives Fresh chopped parsley 3 tbsp (table spoon) olive oil 1 tbsp lemon juice or red wine vinegar 1 minced clove garlic Half tsp dried oregano Salt and pepper to taste Combine all ingredients. In a large bowl, combine cucumber, tomatoes, red onion, feta cheese, and olives. Make the dressing. In a small bowl, whisk olive oil, lemon juice, minced garlic, dried oregano, salt and pepper. Toss and serve.
