Roasted Red Pepper and Tomato Soup. To oven-safe pan add tomatoes, red pepper, garlic, red onion, fresh oregano, thyme, olive oil and s&p, chopped in approximately one inch pieces. Roast for 30mins or until soft and tender. Cool and add to blender with 1 cup of water or vegetable stock and chopped parsley or cilantro. Blend until smooth adding more water or stock if needed to desired consistency. Warm up and serve with grated cheese of choice, chopped parsley and hemp seeds for garnish.
